Southwestern Bacon Burritos
SERVINGS: 4
- 1 tablespoon butter
- 1/2 cup diced onions
- 1 bell pepper, diced (use red, yellow, orange or green or a combination)
- 8 eggs, beaten
- Salt and pepper, to taste
- 1/2 cup HORMEL® Real Bacon Bits, Pieces or Crumble
- 1 cup shredded pepper jack cheese
- 4 flour tortillas
- 1/2 cup prepared red salsa
- 1.In large skillet over medium high heat, melt butter. Add diced onions and pepper.
- 2.Sauté vegetables 5 minutes or until tender, stirring often.
- 3.Add eggs to vegetable mixture. Gently cook and stir until eggs are soft scrambled.
- 4.Add salt and pepper to taste. Sprinkle HORMEL® Real Bacon Bits, Pieces or Crumble and cheese on top.
- 5.Spoon egg mixture down center of each tortilla. Spoon salsa over eggs and roll up, tucking in ends, if desired.
