Quick Bacon Potato Salad
SERVINGS: 8
- 1 (24-ounce) package red potatoes
- 1 celery stalk, thinly sliced
- 1 small red onion, cut into quarters and thinly sliced
- 3/4 cup salad dressing
- 2 tablespoons yellow mustard
- 1 tablespoon lemon juice
- 1 teaspoon dried dillweed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 hard-cooked large eggs, peeled and chopped
- 100g (3.5oz) HORMEL® Real Bacon Bits, Pieces or Crumble
- 1.Cook potatoes according to package directions until tender; drain well. Cool and set aside.
- 2.In large bowl, combine celery, onion, dressing, mustard, lemon juice, dillweed, salt and pepper. Stir in cooled potatoes and eggs. Cover; refrigerate several hours.
- 3.Stir in HORMEL® Real Bacon Bits, Pieces or Crumble just before serving.
