Breakfast Bacon Burrito

  • 12 large eggs
  • 2 cups shredded Mexican cheese blend, divided
  • 100g (3.5oz) HORMEL® Real Bacon Bits, Pieces or Crumble, divided
  • 2 tablespoons butter or margarine
  • 6 tortillas
  • 1 cup Thick & Chunky Salsa
  • 1.In large bowl, stir together eggs, 1 1/4 cups cheese and 1/2 cup HORMEL® Real Bacon Bits, Pieces or Crumble.
  • 2.In large nonstick skillet, melt butter over medium heat. Add egg mixture; cook, stirring frequently, 5 to 8 minutes or until eggs are set but still moist.
  • 3.Meanwhile, wrap tortillas in plastic wrap. Microwave on HIGH (100%) 30 to 60 seconds or until warm.
  • 4.Lay tortillas flat on plates, then spoon egg mixture down center of warm tortillas. Top each with salsa and remaining 3/4 cup cheese and remaining HORMEL® Real Bacon Bits, Pieces or Crumble.
  • 5.Roll up tortillas burrito-style. Serve immediately.
